It's shrove Tuesday on the 28th. One of my favourite celebrations of the year I must say. I remember when my Mum would continuously supply us with fresh-off-the-pan pancakes till we were filled to the brim. But that stuffed, sickening feeling was probably because of all the highly processed white flour! In my recent years I've discovered a new way to have pancakes which doesn't involve wheat but oats instead. This recipe is light and fluffy. It suits the American style pancakes more than the crepe style. So, if you get gluten-free oats you can make this gluten free. All you need is:

 
 
  • 80g Powdered oats (I powder mine in the nutribullet)
  • 1 over-ripe banana (a little brown is ideal)
  • 1 egg
  • Golden syrup
  • Blueberries
  1. Simply whiz this all together in a blender
  2. Heat the pan with a little coconut oil in
  3. Cook till golden brown on both sides
  4. I serve mine with a light dusting of cinnamon powder, golden syrup and blueberries but you can do whatever you want
