Friends, family and fun in the sun! It is also the peak of not only the season but the peak of our innate outward expression. We are full of bountiful energy to go out, explore, dance the night away and hey, maybe fall in love. This year I will be going out to stone henge for the rising of the longest day to finally tick off a long awaited entry on my bucket list.

I'll be spending the very short night dancing to drum beats and taking in all the sacred site has to offer and if I'm honest, probably having a few drinks to keep the night time chill at bay and loosen up my tense muscle, because when you work hard you have to play hard ;). I am however very mindful to keep a balance between the naughty and the nice so I am planning on packing a picnic basket full of seasonal summer fruits for all the anti oxidants and phytonutrients to look after my body that so kindly looks after me through the excessive summer months. These will also bring with them the ability to protect our bodies from the colds and flu that come with the up and down weather and the extra strain we put our bodies through with so much more in our diaries while we have so many more hours in the day to play.

Another bountiful thing about summer are all the amazing berries on offer! These are my absolute favourite snack in the warmer months. I eat them on their own by the handful, in salads and even tossed on my nut butter toast in the morning. Nothing like the burst of sweet juice in your mouth on a hot day. These are all packed with anti oxidant vitamin C to protect against sun damage, liver damage and the sniffles. When stirred in with cream and tahini, you have a very simple but tasty treat to keep you going through the longest day. You could even add them to your ice cubes to keep your super summer solstice sips cool.

But the summer brings with it so much more than berries and a mix of any of the following seasonal fruits and veg would make a delicious and nutritious salad.
